Jerusalem Artichokes - Beautiful and Edible
I came across some info on the edible Jerusalem artichoke plant, also called sunchokes, when doing research on some other edible plants. I'm thinking of ordering some for fall planting through Johnny's Seeds. The flowers are a beautiful yellow remeniscent of sunflowers and the stalks grow to between 6-8 feet. The tubers are edible and have a potato-like consistency. They can be eaten raw or cooked. Here are some delicious-looking raw recipes here and here. This soup recipe looks simple but tasty.
Some facts you should know about Jerusalem artichokes are that they have a tendency to cause gas and their carbohydrates are in the form of inulin which is supposed to be better for diabetics than potatoes. Apparently, that is just after harvest. If they're stored, they will gradually develop more starches.
